It’s a world of noodles, indeed!

Japanese cuisine is not just about the exotic raw fish. There is yakisoba or stir-fried noodle made from wheat flour, and are typically flavored with a condiment similar to Worcestershire sauce. Another Japanese favorite is the Yaki udon, a stir fried Japanese udon noodle dish made with an assortment of vegetables and protein.

The Italians have pasta –spaghetti, fettuccine, vermicelli and so on.

Chinese noodles, on the other hand are known collectively as mien, and fall into three main categories, the most common of which are wheat flour noodles. They also have the Chow mein, a dish of stir-fried noodles with vegetables and sometimes meat or tofu.

Over the centuries, variations of Chaomian were developed in many regions in China; there are several methods of frying the noodles and a range of toppings can be used. There are also a lot of varieties like the Cantonese Chow Mien. Chinese noodles have found their way to the Philippines following the arrival of Chinese merchants long before the Spaniards came in 1521.

The Thais, too, have a lot of noodle varieties – the Wide Rice Noodles or Guay Tiew Naam, which are one of the most delicious types of Asian noodle, and one of the most popular Thai specialties.

There is also the Thin Rice Noodles or Phad Thai uniquely served with grated peanuts;  egg Noodles or Ba Mee Hang and the Bean Thread Noodles or Phad Woon Sen.

 In Korea, traditional noodle dishes are onmyeon or beef broth-based noodle soup, called guksu jangguk (noodles with a hot clear broth), naengmyeon (cold buckwheat noodles), bibim guksu (cold noodle dish mixed with vegetables), kalguksu (knife-cut noodles), and kongguksu (noodles with a cold soybean broth) among others.

Indonesians meanwhile is popular for their fried rice or Nasi Goreng, but equally popular are their Mie Goreng (or Mee Goreng) noodle dish that’s also found in Malaysia and other parts of South East Asia. With a sticky, savoury sweet sauce, noodles are tossed with chicken, prawns, vegetables and signature egg ribbons.
